- 500 grams chicken
- As needed water → for boiling
- 4 bay leaves
- 2 cm ginger
- 2 teaspoons ground coriander
- 8 kaffir lime leaves → 4 for boiling, 4 for stir-frying
- 1 stalk lemongrass
- 4 large green chilies
- 20 small green bird's eye chilies
- 6 shallots
- 3 cloves garlic
- 3 teaspoons salt → 2 teaspoons for boiling the chicken
- 1 teaspoon bouillon powder (optional)
- ½ teaspoon pepper
- 1 teaspoon sugar
- 50 ml water
- As needed cooking oil
How to make...

Boil the chicken with bay leaves, kaffir lime leaves, lemongrass, ground coriander, salt, and ginger for 10 minutes. Turn off the heat and let the chicken cool.
- Fry the chicken until golden brown, then remove and set aside.
- Grind the shallots, garlic, large green chilies, and small green bird's eye chilies using a chopper or mortar and pestle.
